I took the On Demand ICM5.1 class to fulfill the prerequisite training for my VCP5-DCV also. I understand what you're talking about in regards to issues with the lab. I had countless issues during the time I used the On demand lab and logged countless jobs with VMware in regards to these. Thankfully VMware support has always been good for me and responded very promptly.
On topic, in regards to the final assessment questions.
The final assessment questions are based on the modules you complete throughout the on demand training. If you pass all of the assessments at the end of each module like I did then you will have no problem passing the final 50 question assessment.

I agree with weinstein, the MCSA would definitely benefit you considering your current experience is mainly with Windows Server.
Although the VCP would also be great for your CV, I would only really recommend this providing you have exposure to VMware in a production environment already even if the exposure is minimal.
The problem is that VMware is bridging onto the Virtualbox bridge adapter instead instead of the ethernet card itself. You can fix this by editing the properties for the ethernet adapter and disabling Virtualbox bridging. This fixes VMware but breaks Virtualbox bridging. I don't yet have solution that lets both work.
I agree with Richardson Porto on this one.
I've used FreeNAS for my environment and its great. Awesome for learning iSCSI and NFS.

I have 2 new ESXi 5.x environments using 2 separate storage backends for datastores (NFS). I would like to do some performance testing on these 2 environments to see how they compare to each other. I have not done this before and was wondering if there are any vmware products that help with this or maybe some freeware software that I can use to run these tests (IOPS etc).
Any help would be appreciated.

Keep in mind that also every partner is free to include additional software. As Chad Sakac mentioned during VMworld, EMC is looking to include replication via Recover Point for instance.
I don't know where you found the information that is not possible share a folder between guest and host using bridged network, but this is possible... just make sure the firewall on guest/host allow file share and if using DNS name, make sure guest/host can resolve names.
It's not a problem in regards to ASRock compatibility but to Intel's BayTrail chipset.
As psychowood said, once BayTrail will become compatible, all MB vendors will be compatible (up to a certain limit i suppose)

I would like to ask one thing here again, with the USB-eth came one CD which has drivers for linux. As far as I understand since the ubuntu uses vmxnet within VM there should not be a need to install the drivers from cd in the vm. Am I right in this assumption ?
You're right... there is no need to install USB-eth on VM.

What I really intend to do is sharing the some of the host's drives to the domain users of the Primary Domain Controller which runs on the guest.

Sobre a configuração do switch físico, eu preciso apenas ver a configuração de todas as interfaces onde o ESXi tá conectado... o que você postou acima é mais uma informação de "status" que a configuração em si.
E no seu ESXi, tente rodar os seguintes comandos:
-> Coletar informações de failover do vSwitch:
esxcli network vswitch standard policy failover get --vswitch-name=vSwitch0
-> Coletar informações de failover dos PortGroups:
esxcli network vswitch standard portgroup policy failover get -p "Management Network"
esxcli network vswitch standard portgroup policy failover get -p "Nome do PortGroup das VMs"
Obs.: pode rodar os comandos acima sem medo, pois são apenas comandos "get", ou seja, não vai modificar nada em seu ambiente.
